I started PALTA / Food in January 2019 as a creative experiment (originally just on Instagram), and as a vehicle to motivate me to cook more often, more thoughtfully, and more deliberately.

Cooking has always been an integral part of my hobby set, raised in restaurant kitchens and surrounded by talented homecooks my whole life. As an adult I spend the bulk of my leisure time on the road, traveling to places that will energise my creative brain through flavors, colors, design and architecture.

The food I love to cook is the food I love to eat - fresh produce, quality proteins, lots of citrus, soulful spices, open fire where possible. It is a blend of a life spent living throughout Italy, a love affair with the middle east, a genetic disposition for the ocean, and a long standing dream of a sea-facing house on the rural coast of Uruguay.

The recipes you’ll find on this site are a journal of what I cook most often and where noted are inspired by other cooks or literature that keeps me challenged in the kitchen. I struggle to follow strict instructions and anything requiring precision is not for me - thusly these recipes are written loosely by design and are wide open for your own personal interpretations.
